2tbs lemon juice 1/2 lemon

This aioli is an emulsion created with just 5 ingredients: garlic, soy milk (unsweetened), light olive oil,  lemon juice and salt. Extra virgin olive oil is not recommended for this recipe as is going to give it a bitter taste.

Aioli can be thinned with soy milk, adding 1-2 tbs towards the end.

In a tall cup combine the garlic, soy milk, lemon juice salt. Using the stick blender blend until all well combined.

Continue mixing and add the oil gradually.
Use on burgers or salads.
